Simple Healthy Granola

As a huge lover of granola it just seemed wrong that I hadn't tried making it from scratch yet, so I took to my trusted Honestly Healthy  book and got going.



You will need: 



  • 50g dried dates
  • 100g oats
  • 2 tbsp honey
  • 85 g nuts (I used brazil nuts and walnuts but it's up to you)
  • 15 g pumpkin seeds
  • 3 tbsp olive oil

 ONE- Preheat the oven to gas mark 3 (160 C/325 F). Simmer the dates in tiny bit of water to soften.

TWO- Blend until smooth.


THREE- Chop up your nuts if you want to then simply mix everything together well.


FOUR- Spread out mix onto a baking tray and bake for 15 minutes or until golden. Reduce temperature to gas mark 1/4 (110C or 225F) and bake for another 30 minutes.

 FOUR- Leave to cool then transfer to an airtight container.


























I would tell you how great it is with greek yoghurt and almond milk but I have a nasty cold and can't taste anything, but you know I'm sure it's delicious.

October Favourites!

I do love summer, the long evenings and lazy afternoons in the sunshine just do it for me. Although I can't help but get excited when the leaves turn that lovely orange colours and it's acceptable to snuggle up and drink twenty hot chocolates a day. So I thought I'd share some of the things I've been loving as things start to get a little colder.

ONE- THE PERFECT VELVET PLAYSUIT
























Gorgeous right? Yeah it wasn't cheap either, but sometimes you stupidly decide try on things that you know you can't really afford and fall in love with them. Anyway it's fun to stare at and excuse my actions by calling it a Christmas 'investment piece'. Can be found on Topshop.

TWO- SLEEK 'AU NATUREL' EYESHADOW
I've been eyeing this up for a while and finally decided to get it... and well I've not been disappointed. Full of a selection of lovely matte and shimmery standard natural shades with great pigmentation. It's sure to satisfy me all year round. It may not be a naked palette but we can pretend right.

THREE-BARRY M NAIL VARNISH
I'm sure we all know by know that Barry M do THE BEST selection of nail varnish with great stay even with just one coat. I've been particularly loving their more Autumnal darker shades. (Watermelon, Berry Cosmo, Red Black)


FOUR- PUMPKIN PIE
I'm pretty obsessed with cinnamon, so much that my dad's started to oh so hilariously call me 'cinnamon girl'. So any excuse to eat a pie full of that and other delicious spices seemed like a wonderful idea to me. I followed this recipe from the foolproof recipe queen Sally and it was all kinds of good, flaky pastry with creamy spiced pumpkin, oh yes.  Also I know it's so hyped and cliché but a pumpkin spiced latte from Starbucks will not disappoint, I promise you.

FIVE- MY 'SNUGLY SCARF'  BLANKET
As I said I adore  wrapping myself up in a blanket and this one from Ikea is my absolute favourite. Literally like wrapping yourself up in a massive scarf. Found here.

SIX- HALLOWEEN

I love me some halloween. Every year me and my mum put up what we, modestly think is a pretty damn good window display and attract a bunch of trick or treaters. I also take pumpkin carving very seriously, this year I went for the boogey man and a haunted house.

SEVEN- THE DROWNING OF ARTHUR BRAXTON
You might of also read this this month if you took part in the lovely Carrie's Booktober. This was my favourite of the month (well I'm still finishing Eleanor and Park shh) which I really wasn't expecting. It's not like anything I've ever read before, it's the perfect modern fairytale full of unpredictable weirdness.

White Chocolate & Raspberry Brownies

It's seemed my duty to make brownies considering it's national chocolate week, right? and what better flavour combination than delicious raspberries and white chocolate. This recipe's pretty loosely based on one by the queen herself, Mary Berry.
One was eaten before took this, apologies.



Ingredients:
160g dark chocolate
170g butter
2 eggs
170g caster sugar
1 tsp vanilla extract
60g self-raising flour
Box of raspberries
120g White Chocolate, chopped

Method:
1 Grease a 20x20cm roasting tin (or whatever you have) with butter and a little icing sugar. Preheat your oven to 190°C (170°C fan, Gas 5).

2 Put the chocolate and butter in a bowl and sit the bowl on top of a small saucepan of gently simmering water. Melt the chocolate slowly, this will leave an amazing smell floating around your kitchen, so avoid inhaling the whole bowl. Remove the bowl from the pan and leave to cool for a few minutes. 

3 Put eggs, sugar, and vanilla extract in a bowl and lightly whisk. Gradually beat in the chocolate mixture. Fold in the white chocolate and finally the raspberries, trying not to crush them up too much.

4 Pour the mixture into the prepared tin and bake in your preheated oven for about 40–45 minutes or until they are firm to the touch and leave a skewer clean.The crust should be dull and crisp, but the middle should still be gooey. Leave to cool in the tin, then cut into 16 pieces. Add a sprinkling of icing sugar if you're feeling fancy.

Hello?

'Should I just start a blog?' I ask my self for the hundredth time as I mix up some butter cream.

'What if no one reads it'
'My writing isn't that great' 
'How the hell can anyone use HTML codes?'



Then I just thought why not? What bad can really come of this? So here I am typing this, desperately trying to introduce myself as a normal human being. Not sure I'm doing a very good job really.

I plan on posting recipes, outfits, lifestyle stuff, you know the really original, typical blogger things. I'm finding this far too cringey, I'm sure I'll get used to it eventually. You're welcome to follow be on bloglovin, or don't, whatever, it's your life.
